Leek and Potato Soup

Slice leeks, using white and light green parts only
In a sauce pan sauté leeks in butter until soft
Slice potato and add to leeks
Add chicken stock and simmer until potato is soft
Blend using stand-up or emersion blender.
Season with salt and pepper.
Serve hot or cold
Optional garnishes - chopped chives or dollops of sour cream
